I actually grate onion and fry it in the olive oil for 1 min before adding the tomatoes. Onion is basically liquid that way. It makes the tomato sweet. I add a lil bit of butter too. It reducea acidity. I also add concentrate tomato paste. Most importantly I choose tomato brand with Mutti being my favorite
