What Claire hasn’t mentioned is that bacon cooked on a rack takes longer than that baked directly on the tray. As the bacon cooks on the tray it cooks in it’s own grease, speeding up the time needed to render it crispy. Bacon cooked on a rack at the same temperature (started in a cold oven set to 400f) takes at least…
