I do not know if this qualifies but I have been smoking my “Chashu”. It usually take between 4 to 6 hours. I have experimented with several cuts but the most successful so far was a pork lion stuffed with brown sugar, smoked for 5 hours at 160-180 Fahrenheit over lump charcoal with seasoned Applewood.
