Is the salting 48 hours ahead better than brining overnight? I’ve always found overnight brine to be excellent for flavor and retaining moisture.

I think getting the ideal number of kernels popped and quality depends on lots of factors. The brand, type, and age of the popcorn. Humidity. The cookware. Oil type and quality (if used). Cooking temperature. Altitude.
Really just need trial and error to find a good balance.
