I wrote a long response to this and then decided it was a waste of time. I’ll just say that it is a fair point, but I disagree that the statement destroys Barstool’s position in the negotiations.

If you read the counter notice to Twitter, their strategy is clearly to portray themselves as the party that is working in good faith to negotiate a resolution, which makes miel the unreasonable one. The “anxious to settle” language is part of that strategy, and makes sense in that context.
