It’s completely unflavored (other than molasses). I’d go with a recipe that has cinnamon, ginger, etc.
The problem is that you are assigning yourself as the arbiter of whether Indian is offensive in the context of the word pudding. Unless you are Indian, you don’t get a vote.
At my “local” supermarket (Fresh Farms in Niles, IL), they have full fat Galbani in the deli case and will slice it to order or chop off a chunk if you prefer to shred it. They have Grande provolone there too - and both are very reasonably priced (among the cheapest cheeses in the deli case).
The issue is that Indians, themselves, prefer and use “Indian” in multiple contexts. My cousins live on an Indian reservation and nearly everyone on “the rez” uses Indian and dislikes “Native American”. White “allies” are concern trolling rather than listening to their voices.
Because Indians, in general, don’t care and (in the US) tend to prefer the term to other ones like “First Peoples”, “Native Americans” and the like.
Indian pudding seem right up my alley - enough so that I went out of my way to get the supposed “best” version at the Colonial Inn in Concord, MA.

Deep dish is a Chicago style, though. Chicago has arguably four indigenous styles - Chicago style tavern thin, deep dish, stuffed and double-decker (although the latter is mostly a collar county thing + Ranalli’s in the city).
It’s kind of frowned upon to put up your personal list, although you can mention favorites. The idea is to not single out individuals who came in “last” - you essentially have a Top 3 and everyone else just didn’t make the Top 3, at least as far as the public is concerned.
They only released top 3 for each category and a top 4 overall.
