I always thought of a griddle as a flat cooking surface, and you’re right it covers a larger area such as multiple burners, But what do you call a “griddle” if it has raised ridges for a cooking surface?

Not necessarily, I have both types: an oven tray with raised ridges that I often use on stovetop across two burners (griddle style indeed, except for the raised ridges), but I also have a square frying pan with very defined ridges. The principles of binaryvisions’ response still apply.

You understand! I have a preference for making pork belly (think Korean BBQ) in a grill-pan for exactly this reason: its fatty, it releases a ton of oil, and the shape of the pan allows me to drain that off between batches.
