Not a Newbie, and not going to post a spoiler.  But I take issue with what you were saying regarding Stannis' past style.  I think you missed the part where Stannis cut off the tips of Davos' fingers for being a smuggler, which I am pretty sure Sallador talked about.  He has always been a hard bastard.
