As a fan of lap cheung, I’d say that bacon works just fine. Not the same flavor, but both are equally tasty.

For the most part, it’s just preference, but for the record, Chinese fried rice is typically made with long grain rice (I’m Chinese and this is my favorite), and Japanese/Korean fried rice is usually short grain/sticky.
