I think that's intentional. In 'normal' cooking you sear both sides to retain the juices, but as the meat is cooked at a low temp that isn't so much of a problem. Freezing the meat on a flat surface will result in one side being perfect for searing.

This theory doesn't explain why quaggas only had stripes on the front part of their bodies. Half-stripey quaggas are divergent from full-stripey plains zebra. If the stripes function only as an insect deterrent, then there is no obvious evolutionary advantage to loosing markings on half the body.

If someone does get hurt then the installation automatically becomes 'performance art'.
