There is no accommodation for a bunch of extra hot meals just in case a coach passenger wanted to buy one. Airlines bring only as much as they have to.

This. I work at MSP and have been to countless airports, I guarantee there were at least three different options for hot food. Expensive? Sure, but the issue would have been avoided.
