If you are worried about hacking up a Galaxie ... just find a really rough example and no one will even think twice.

Galaxies aren’t rare cars - they made HUGE numbers of them - so as long as it isn’t a rare trim option or some rare unicorn like a SOHC 427 that somehow slithered its way into the bonnet space, it isn’t

You can pretty much build a late 50s or early 60s Galaxie / Fairlane / Thunderbird into a stock car if you want to. There is a fair bit of aftermarket support even. (I know because my father has had a 64 Galaxie since 1987.)
