Exactly. Albumin or albumen is the protein that makes up the egg whites. Duck eggs have more albumin.
Some breeds are decent flyers but pekins and khakis can't get more than four feet off the ground or travel more than twenty feet before losing momentum. That's one reason why I chose those breeds.

Pretty much the same as pheasant. First step is an overnight soak in a brine solution. Second step is to coat the breast with some type of pork fat (rendered fatback is best) and salt and pepper. Yep. I have a nice flock of pekins and khaki campbells that I raise for eggs and meat. A lot easier than raiding wild nests. Legal too. :-)
Only if you don't know how to prepare a wild turkey. Good meat when it's prepared by someone who knows what they're doing.
I've read that it was common to raise ducks and fish in the rice paddies. Chicken eggs can't hold a candle to duck eggs when it comes to flavor and nutrients.
