My guess is they tried to start it, it failed for what ever reason, they kept the fuel contool on and hit it again and ignited the fuel that had collected in the tail pipe. Happens.

You found the rare one. Cherish it. Protect it. I tried to find one in 1999/2000. Each and every GSX I looked at was beat to death. Just rung out husks of their former selves. Leaks, dents, cracked seals and messed up interiors. I ended up with a 97 GS-T as the next best thing. It was a great, fun little car.

All the cars you mentioned exist because people are weird, don't buy cars based on logic alone and one person's version of fun or good value aren't the same as another. All the cars you listed are great, but don't scratch everyone's itch.

LMP1 and LMP2 have reasonably good features to help prevent flips including the longitudinal fin and large cutouts over the wheel wells. Not perfect, but they do address the risk. The DP cars are short for this world, so they probably won't invest much in them.
