If you replay a boss enough times to go through your whole stock of vials, you should have a pretty good idea of how to take him/her on at that point. And restocking supplies is a ten minute run through just about any area in the game. I have more vials than i know what to do with most of the time. Bullets not so much.

Next time you go through on a new game, try not fighting him (you need to wear a specific outfit, and he won't be hostile). He offers you side quests.
