I think Aunt Wendy has a few lives left in her. The promo materials feature all four ladies front and center. Perhaps they just had her listed as guest star in the pilot to keep the audience in suspense.

While she never quite was a mainstream deity who frequently interacted with the Olympians, Hecate is very much an entity from Greek mythology. However, her origins and lineage is the subject of some debate amongst scholars.

Hecate is a badass, but she's part of the Greek pantheon.  If this show follows the books, there will definitely be incorporation of Norse mythology into the show. Don't want to give too much away but if you want to know more just look up the origin of the names Ingrid and Freya. 

They had a montage of mama witch visiting the cemetery each time her daughters died over the centuries. They will definitely be revisiting prior lives, though.
