I do a similar thing with whole thighs on the grill. Except I put chopped up potatoes underneath the thighs. I cook the thighs on the top grill and the potatoes on the bottom grill and let the fat drip into the potatoes. It is easy to cook and only takes about a half hour.

I buy bone-in thighs. I cut them down into cubes for yakitori. But I am often left with a bone with a good amount of meat, but cannot really be cut off. I soak them in buttermilk and then grill them up. And I then I cover them with hot sauce. They are fantastic.
