Speculoos or speculaas is a traditional type of cookie from the Low Countries that is spiced with ginger, cinnamon, mace, nutmeg, cardamom and white pepper, if done correctly. So if there's no ginger, it's not speculoos.
That's actually Flemish, as this is a Belgian invention. In Dutch it would be called "Speculaaspasta".
As a Belgian I apologize for this addictive export product. (Speculoos paste). I only bought it once, and emptied the jar with a spoon before the day was over. Never again! Can't be trusted with it!
