That's a really, really, bad idea. Once that oatmeal cools below 140, it's bacteria time! It needs to be refrigerated within 2 hours of hitting 140 or less. If a restaurant would get a citation for it, it's probably not a good idea to do it at home. http://www.fsis.usda.gov/wps/portal/fsi…

I've had a Dexter Russell one for 10 years. Mostly after I made around 1000 rolls a day for a summer. It's a tank that can be used for loads of tasks in the kitchen, and can be used on a solid surface countertop without leaving cut marks like a sharpened knife would.
