I always thought authentic meant the food people of that culture actually eat rather than food that is changed to fit another cultures tastes. I have noticed at least in the US that Chefs of Color that make their own cultures foods tend to get less money and accoladed when compared to White Chefs.

Islamophobia is much more socially acceptable and widespread bigotry than anti-Semitism. I’m not quite sure how your response refutes the quote you pulled out. It is possible for the current administration to be making this move because it is the most politically advantageous, not because it’s the right thing to do— even though it IS the right thing to do.
