Can anyone recommend a decent but affordable piece of Mac-friendly hardware to handle scanning statements and other physical documents quickly and easily to PDF?

Anyone know of a tool I can use to generate ePub files from online articles? Instapaper kind of does this (it lets you export an ePub file of everything in your reading list), but I'd like one file per article ideally, not one giant book full unrelated articles.
