If I had to teach someone, I'd probably teach them on an arena shooter like Unreal Tournament. Reloads are quick or nonexistent, guns have only two functions, there's no ADS, there's no gaudy armor to collect, there's a wide variety of guns, projectiles are generally slower, and enemies are easy to see and expect.
