Did you ever go to Halsted street before they gentrified it? Maybe about 14th st? I’ve had dozens, maybe hundreds, of pork chops sandwiches in my life from at least 4 different places. Mostly when I was in college or medical school.

Grilled spinach would make it healthy and therefore wrong. I have made them at home and used a butterflied, boneless chop because it is easy. The pork chop has to be thin and the onions should cook forever.

I have done it with lemon juice too. I’m not sure it makes a difference.

Preserved lemons can be as simple as salt, water, lemons, and time and there are roughly a million variant recipes on the internet if you want to add some spices.
