Add to that list all the people who wrote/are writing books about all the horrible, illegal, things they witnessed while members of the administration, but couldn’t do the right thing and bring all those crimes to light when it might have stopped some of them from occurring. They don’t regret a thing, would do it all…

I enjoy pretty much all the characters, but there is a bit of tonal whiplash in the storytelling between the comedy and the very serious situation they get themselves into.

We own the extended versions and watch them about once a year. At this point, I have trouble remembering which scenes were added unless I watch them with a cheat sheet, but I think your analysis is pretty accurate.
I’ve made the smoked cream cheese a few times and can attest to how good it is.
