I think i might try this with the stalks cut in 1 inch pieces because i like bigger pieces of asparagus. Maybe cook them 30 or 60 seconds longer.. I don’t see how that will be bad.
People are dumb, so I believe it, but when I look at a restaurant menu I assume a $20 item costs at least $25 after tax and tip and I don't see how people can't figure that out. Aren't they more upset when the total is a quarter or a third higher than what they were expecting? Do they just tip zero?

Stracciatella is too many things that are very different. In addition to being the inside of burrata, it is also an egg drop soup and chocolate chip gelato. I demand that the Italians change the name of two of these foods.
“Service fees” are becoming ubiquitous. I don’t know if I am supposed to count those towards tip or not. I suspect not, but it is never clear and since different places use them for different things, I find it hard to know.

No need for trial and error. Coffee is basically water. Everybody knows you can make simple syrup, which is a 1:1 solution of water and sugar. There are so many beers and wines that it is impossible to know them all. Picking off of label/price/style is far from the worst way to go.
