You can buy old Schat-Harding boats similar to this for a few thousand in the UK, I've met a few people who have torn out all the seats and turned them into little liveaboard boats for canal and river use.

I think you're right that this is unlikely to appeal to many based purely on cost saving alone, but I could see it helping people keep a car which they love, but is ultimately impractical for their daily needs, on the road as a daily driver, and that is definitely a good thing.
