I could see this working well with the right cheese. It would have to be something with a sharper sweet note to balance out the brininess though. Maybe something like good parmesan. Subway’s bread might sink the whole thing though.
My favorite add to buffalo sauce is honey and grated pecorino romano cheese (doesn’t have to be the good stuff, the supermarket stuff is fine). Even better if you use Mike’s Hot Honey (or equivalent). Wing sauce works so well when taken in a sweeter direction.

I love slow or pressure cooking gizzards and hearts until super tender in a basic chicken stew (basically like pot pie filling but with more gravy) and serving over rice or potatoes. Sometimes I’ll cook them until tender, chill them down, and then season, flour, & fry like I would fried chicken. So delicious.
