I get why you went with "Pok Pok," but for me, Thompson's "Thai Food" is my most used book on the shelf. I really dig how he writes a recipe, and when I lived in small-town Slovakia, it was the best way to really get my favorite cuisine.
I'll also throw my hat in the pro-"Made In India" circle. Really easy recipes with great flavor output.
Vatcharin Bhumichitr writes some easy to follow stuff with tasty results. I just picked up his "50 Great Curries of Thailand" the other day in the discount section at B&N the other day. The panang was great.
I have to say, his cookbook is my most referenced one in my kitchen.
