Great article Albert. Smoked briskets are one of life’s greatest pleasures. The comments include, as usual, some bad advice. One said not to soak the wood chips. Nonsense. Dry wood chips flare up and raise the temp without making much smoke. Another reader advised not to purchase the $120 barrel shaped grill/smoker.
