I legitimately shocked nobody tried to make this game an actual good game (except with generic fantasy elements rather than Zelda elements). The other two games as well.

Because the plot mostly focuses on the other characters rather than Saitama. They’re the ones that get actual character development and move the plot forward. Saitama DOES get some development, but for most of the manga he’s a plot device.

No, there’s plenty of stuff to cram into a Season 2, even if they do 26 episodes like My Hero Academia Season 2.

The problem with Gunslinger Girl was mostly because the studio decided to do an actual faithful adaptation of the manga rather than emphasize the melancholy and fridge horror like Season 1 did.

It’s been happening more often lately now that anime is actually splitting off into seasons rather than being a long runner, but there’s still many times where a show keeps the same studio. It all depends on availability.
