I think Ruby will come back. As you pointed out, Ruby is the only contestant the writers developed (to an extent) and Ruby x Darius is the only relationship the writers explored. I predict Darius will leave the final two contestants and run off to be with her.

This season is not that interesting. I'm disappointed, especially since the concept for this season (the first black suitor and race issues in reality tv) was very promising. Also, the lack of character development for the contestants is really bothersome (well, for me it is).
