Hyrule is mostly Medieval European society though

In Breath of the Wild there are a few races. The central race and theme are the Hylians, all their settlements (Hyrule Castle, Bridge of Hylia, Temple of Time, Hetano Village, and the Citadel) are medieval European structures. Even the citizens are dressed in tunics of medieval Europe.

The Zelda series is predominantly medieval Europe inspired fantasy, so I do think that a photorealistic Hylian is caucasian in appearance.
