It's soup. Once you know how to make it you don't need a recipe. Just make it and use what's on hand or looks fresh at the market.

Most firm fresh cheeses will work. Around here (Wisconsin) farmers cheese is usually a good substitute. Fresh mozzarella melts too much while queso fresco is too dry and crumbly but just about anything in between should be fine.
