It's because they have different storyboard artists per episodes so certain ones are animated differently then others. I honestly enjoyed the episodes because of Steven and Peridot's interactions and the whole episode being a reference to classic Looney Tunes.

It's fandom is annoying but in my opinion, the show is actually really good unlike MLP.

The show's first few episodes are definitely incredibly weak. Around episode 24 or so is about where I'd start personally though you might miss certain details from before.

Not everyone is bound to have the same tastes on a show. Some can't stand the bright colorful cheeriness of it while others such as myself adore it.
