I'm not sure it's writing Eve off permanently, so much as giving the character an out in case Famke Janssen can't return. They didn't write her out in a way that means they couldn't bring her back, and her moving away is probably one of the easiest to undo if need be.

They probably just re-used a legal pad from an earlier scene and didn't realize the words were legible.
