My guess is that there is probably "pre-work" done to calibrate the host behaviour to the guests. In the dressing room the host said all the clothes were 'bespoke' and obviously were his size. So they have at least taken his measurements beforehand! Maybe you select some type of "parental control" option which turns

My 2 cents -
the show has established that Westworld is marketed to the very rich. And the American West experience is I think not meant to be realistic, but more the mythological idea of the "Wild West" and the chance to play cowboy.
