I think maybe the journal is like Bonnie's video diary and crossing off of dates on the calendar. Damon & Stefan's mother might have used the journal to keep track of the passing of time in the real world. Bonnie flipping through the journal and seeing 1903 doesn't necessarily mean it's 1903 in the prison world… fits…
