I'm type 1 so I'm just speculating here, but is it possible that the insulin resistance of type 2 combined with Christine's high everyday carb intake would result in producing and releasing extremely high amounts of insulin into the blood, which then triggered hypoglycemia when she suddenly reduced that sugar intake?
