While Gravity Falls is the big one, they also make Phineus and Ferb, made(?) Tron: Uprising, and are making Star Wars: Rebels.
They do the 8 episode seasons so that they come out quicker; if they did 13 or 16 episode orders it'd take even longer. Pretty much everything involved on the creative side is run by just two people. Making a lot and making it fast isn't possible.

I need some clarification on the Final Jeopardy question. One of the contestants wrote, "Zepplin" which was accepted. Why? Ignoring that it's spelled wrong, zepplin reduces the word to two syllables; zeppelin is three. Why was it not marked wrong when her question had an incorrect syllable count/pronunciation?

It's definitely an old person complaint/joke, but just imagine how amazing Jack fighting terrorists in a bathroom would be.
