Basic seasoning involves salt and pepper together. This is an international thing, not American. Cumin and coriander are specific seasonings for specific things. A dish that uses them still need salt and pepper.

Kosher salt should be used almost exclusively for cooking. Douchebags use truffle salt.

If the cook does not season their dish properly, that is a negative. Period. Being able to properly salt a dish is a basic cooking skill.
