I was being very general. It was a broad question, so i gave a broad answer. Personally, I roast my broccoli in the oven and I prefer my onions/peppers with a little crunch left in them.

Start with root vegetables/Cruciferae (broccoli/cauliflower/brussel sprouts) first, followed by your more tender veggies (peas/beans/corn), and then your aromatics last (onion, garlic, peppers). The aromatics brown much faster than the others.
