With eggs I tend to not even look at the date, and instead just use the float test to determine if they’re still good. If they float in water, they’re bad. Seems more accurate to me than the “Use By” date.

It’s not actually a Julian date in the sense used in astronomy. It’s the day-of-year — i.e. January 1 is 001, December 31st is 365 or 366 on leap years. I’m not sure why it’s called a Julian date other than that, like a Julian date, it’s the ordinal date in days from a particular epoch.
