This gave me a chuckle.

I couldn't disagree more, I don't like the lid (creates steam, bad for texture) and I hate the flipping, it's ok for it not to cook all the way through- in fact I prefer the gooey custardy egg to mix with a little cheese.
Don't be a pussy- Your omelet does not need to be of uniform doneness. It's soooo fucking good when you fold a plain omelet, that's right no fillings, and it oozes a little, just add salt, pepper and a thin spread of butter. Eating it well done is like every other fucking thing, well done shit (figurative) tastes…

Cook them on the outside edges of your grill and flip them once after about 6-8 minutes. Allow another 6 or so…
By far my favorite column of the week, every week. Great work Albert.
One easy way to avoid having to skewer the meat and the veggies separately is to sweat the veggies with olive oil, chopped garlic, fresh rosemary, dry thyme and fresh oregano. Put the squash/zucchini, bell peppers, red onion and yellow onion in a saucier with your olive oil herb mixture and toss to coat, turn the heat…
