I’m skipping the roasts (and family) this year in favor of his & hers sous vide Wellingtons, because they are basically zero effort.

My first attempt puff pastry last weekend came out ok, and it made for some decent cinnamon twists. But I’m going to keep the work to as little as possible and thaw a box of Dufour. 

I agree with you about using cranberry sauce (more, or less) all year long. Now can you somehow merge cranberry sauce with those (totally tasteless) sweet potatoes into something with a bit-O’bite that’s tasty?

He used a fork to poke some holes in the cantaloupe then served it with spoons so we could eat and drink at the same time. There’s some evidence that terpenes in unfiltered coffee can have a negative effect on LDL levels. The evidence is mixed, but paper filters will remove the compounds in question if someone was worried about it.

Sigh... if you have to heavily doctor drip coffee* to ‘like’ it, you probably don’t like coffee all that much. Or you’re just looking for the effects.

I used to think immersion circulators were unitaskers, then I got one and realized they have more than one use. If you want to “speed thaw” a frozen piece of meat, simply fill the vessel with cool water, drop the bagged frozen slab in, and set the Anova to a temperature below the water’s current temp.  

It’s also great for mashed potatoes and other sides for things like Thanksgiving where you’re preparing a ton of stuff. You can make them up a couple of days in advance, then toss them in the hot tub that morning to have them ready for dinner.

Anyone who thought this was something to be scandalized over has no business being around food prep. If you think Panera makes everything they sell there fresh every morning (or any other fast food restaurant for that matter), you are insane. There is a reason the food always tastes the same no matter what location

I hone mine regularly to keep them nice and sharp*, you can definitely tell the difference in effort required to get through something. More effort = less stability.
