Which is perfectly normal. You rarely follow the flight plan on such long flights, its almost always revised routings for traffic spacing or weather purposes.
I was going to mention pilots can request a certain flight level, but it is up to the ATC to grant that request. I understand that generally, the flight levels are assigned by ATC.
