I don’t see how Laurence beeing optional making him not a subset of “everything but the final boss in the dlc”.

“Lobos Jr has since gone on to defeat everything but the final boss in the DLC.” No he has not. He is also missing Laurence, The First Vicar. Which in my opinion is also the hardest boss of all souls games.
