You can use whole peeled tomatoes for almost anything. Pour them out of the tin into your (washed) hand, one tomato at a time, and crush them in your fist. I’ve got a bit of a question, somewhat unrelated to this recipe. It’s possibly related to the differences between ingredients available in the States (where this recipe was written) vs Australia (where I am).
In my experience, forks are a better option. They tend to be a more stable base.
I probably should have put an emoticon in there or something to show that I was being a bit tongue-in-cheek with my comment. Yes, it’s just there to collect any leaks, so it probably doesn’t have to be a baking dish, let alone a shallow one that also happens to be made out of glass.
