I really enjoyed Helter Skelter. I also recommend Zodiac (which was my gateway drug into true crime), Mindhunter, and The Stranger Beside Me. I’ve never read it but my mom (who also loves true crime) loved Blood and Money.

I’ll second Devil’s Knot, and the accompanying documentaries. Personally I didn’t love I’ll be Gone. I think because McNamara passed away before she could finish it it feels scattered and not quite complete. The Witness Wore Red and Educated are some good non-fiction reads that aren’t true crime.
