Some cops get uncomfortable about people recording them when they're on duty. If you have some interaction with the police with your dash cam running, they may ask you to turn it off. If you just turn it off when they ask you to, they're not going to give you any more trouble about it.

With a few exceptions. I think the new Range Rover has a button on the dash to disconnect the anti-roll bars to allow greater articulation when off-roading. That's probably not something that can be easily replaced aftermarket.
