Yes, the chicken Philly is truly an offensive abomination invented by the same jerks who invented chicken chili. You have to use decently marbled beef in a true Philly. 

Real Texas Bowls of Red do not resemble meat sauce. They have relatively large chunks of beef in them, not ground beef. 

Square cut thin crust round pizzas work well for appetizers. With a stiff cracker like crust you don't get the pizza flop that long angular slices get. 

You have to use an excellently marbled steak to get a well done steak cook to stay moist.

I wonder if it was bone particles that were too large. I had some sausage a month ago that normally gives no problems. That month several of the links had relatively large bone particles in them. Bone particles are supposed to be ground to dust/powder size, not as large as they were.
